Roasted beet feta platter

Roasted beet with a simple dijon vinegrette and a sprinkling of salty goat feta cheese.

To roast a beet wrap in foil and bake for 90 mins on 450 degrees F. Cool and peel slimps off easily, slice and enjoy warm or cold.
